Organoleptic Characteristics:
Appearance: Homogeneous when cut, thin slices with fat infiltrated in the muscle mass. Characteristic marbling.
Color: Between pink and purplish red for the meat and yellowish white for the fat. Consistency: Firm and homogeneous texture, not very fibrous, without pastiness.
